For lovers of artichokes the best way to eat them keeping all their nutritional principles.

Clean the artichokes and place them in water and vinegar for 30 minutes, pull them out and let them dry, cut them into fine slices, place them in a salad bowl and toss with extra virgin olive oil,  add the lemon slices and parsley if you like it and voila’ a dish rich in minerals.

No less it is an  ideal dish for those who have high cholesterol!  Bon appetit!
